Salmon, Potatoes and Tenderstem Broccoli

Get all the goodness of omega-3 with easy baked salmon for dinner. The current UK guidelines state that we should eat at least 1 portion (140g) of oily fish a week. Salmon, just like any other oily fish (e.g. herring and mackerel), are a good food source for omega 3 fatty acids and protein. The omega 3 content of oily fish is the main nutrient in oily fish that has powerful health benefits for your body and brain. This recipe makes 2 portions.

Method:

  1. Preheat the oven at 190 degrees fan oven.

  2. Keeping the skin on, chop the potatoes into chunks. The smaller the chunks the quicker they will cook.

  3. Place potatoes on a baking tray. Drizzle over some olive oil, salt and pepper seasoning or some roasting potatoes seasoning of your choice. Mix this in so that all the potatoes are covered. Bake potatoes for around 40-50 minutes, until crispy.

  4. Prepare the salmon. Place foil on a baking tray, and enough to be able to wrap the foil around the salmon to make a parcel. Place the salmon on the foil, brush over some olive oil and seasoning of your choice, then close the foil parcel loosely. I would wait until the potatoes have been cooking for 20-25 minutes before putting the salmon in.

  5. Cook the salmon for 20 minutes.

  6. Boil the kettle and place the boiling water in a saucepan. When there is around 8-10 minutes left on the time for the salmon and potatoes, I would then put the broccoli in the saucepan and let it boil for 5-6 minutes.

  7. Crumble the feta cheese with your hands and split into to portions. Place a handful of spinach on your plate. Once the broccoli, salmon and potatoes are all cooked then you can finish plating up the food and get eating!


If you are looking for an easier option for roasting and cooking potatoes, then I highly recommend getting a Ninja multicooker or any other air fryer options. It takes only 20 minutes to cook roasted potatoes, more than half the time it takes in an oven, and they turn out nice and crunchy.
