Salmon, Potatoes and Tenderstem Broccoli



Enjoy the benefits of omega-3 by preparing a simple baked salmon dinner. According to the latest UK recommendations, it is advised to include a minimum of 1 serving (140g) of oily fish in our weekly diet. Salmon, along with other oily fish such as herring and mackerel, is a rich source of omega-3 fatty acids and protein. The omega-3 content in oily fish is the key nutrient responsible for the significant health advantages it offers to both the body and brain. This recipe serves 2 portions.

Method:

  1. Preheat the oven to 190 degrees in a fan oven.

  2. Keep the skin on, chop the potatoes into chunks. The smaller the chunks, the quicker they will cook.

  3. Place the potatoes on a baking tray. Drizzle over some olive oil, salt, and pepper seasoning or some roasting potatoes seasoning of your choice. Mix this in so that all the potatoes are covered. Bake the potatoes for around 40-50 minutes, until crispy.

  4. Prepare the salmon. Place foil on a baking tray, enough to wrap the foil around the salmon to make a parcel. Place the salmon on the foil, brush over some olive oil and seasoning of your choice, then close the foil parcel loosely. I would wait until the potatoes have been cooking for 20-25 minutes before putting the salmon in.

  5. Cook the salmon for 20 minutes.

  6. Boil the kettle and place the boiling water in a saucepan. When there are around 8-10 minutes left on the time for the salmon and potatoes, I would then put the broccoli in the saucepan and let it boil for 5-6 minutes.

  7. Crumble the feta cheese with your hands and split it into two portions. Place a handful of spinach on your plate. Once the broccoli, salmon, and potatoes are all cooked, then you can finish plating up the food and start eating!


If you are looking for an easier option for roasting and cooking potatoes, then I highly recommend getting a Ninja multi-cooker or any other air fryer option. It takes only 20 minutes to cook roasted potatoes, which is more than half the time it takes in an oven, and they turn out nice and crunchy.
