Pasta Pesto, Chicken & Veggies






Simple to prepare lunch option that is perfect for meal prepping. Prepare the night before or in the morning for lunchtime. It only takes 15-20 minutes to make. This high-carb and protein meal will provide you with energy for the rest of the day. This recipe yields 2 servings.









Ingredients:

  • 120-180g of pasta (depending on how big you want the portions)

  • 1 bell pepper

  • 100g mushrooms

  • Spinach

  • 1 chicken breast

  • 1 garlic clove

  • 2 tsp red pesto paste

  • 100g cream cheese


Method

  1. Bake the chicken in the oven at 180 degrees fan for 30-40 minutes until cooked through. If following the MABL meal plan, you may have already prepared some shredded chicken, so you do not need to cook more chicken.

  2. Start cooking the pasta as per the instructions.

  3. While the pasta is cooking, chop the peppers and mushrooms.

  4. Heat a drizzle of oil in a pan and fry the peppers on low-medium heat for 3-4 minutes.

  5. Once softened, add the mushrooms and fry for 2-3 minutes.

  6. Add garlic and cook for a further 1 minute.

  7. Mix in the red pesto and cream cheese.

  8. Add a handful of spinach into the pan, and once the spinach has wilted, remove the pan from the heat.

  9. Once the pasta and chicken are ready, add them to the creamy mixture and mix well until combined, serve and enjoy.
