Pasta Pesto, Chicken & Veggies

Easy packed lunch meal, and a great meal prep option. Cook the night before, in the morning in preparation for lunch time. Takes around 15-20 minutes in total to prepare and make. High-carbohydrate and protein lunch, to give you energy for the second half of the day. This recipe makes 2 portions.






Ingredients:

  • 120-180g of pasta (depending on how big you want the portions)

  • 1 bell pepper

  • 100g mushrooms

  • Spinach

  • 1 chicken breast

  • 1 garlic clove

  • 2 tsp red pesto paste

  • 100g cream cheese

Method

  1. Bake chicken in oven, 180 degrees fan for 30-40 minutes until cooked through. If following MABL meal plan, you may have already prepared some shredded chicken, so you do not need to cook more chicken.

  2. Start cooking pasta as per instructions.

  3. Whilst pasta is cooking, chop the peppers and mushrooms.

  4. Heat a drizzle of oil in a pan and fry the peppers on low-medium heat for 3-4 minutes.

  5. Once softened, add mushrooms and fry for 2-3 minutes.

  6. Add garlic and cook for a further 1 minute.

  7. Mix in the red pesto and cream cheese.

  8. Add a handful of spinach into the pan, and once the spinach has wilted, then remove the pan off the heat .

  9. Once the pasta and chicken is ready, add to the creamy mixture and mix well until combined, serve up and enjoy
