This recipe is inspired by a Hello Fresh recipe I previously tested, with my own modifications to simplify the process. It's a quick and easy meal with minimal preparation time, taking about 30 minutes to cook. I find it delicious and packed with flavor! This recipe yields 2 servings.
Ingredients:
1 bell pepper
1 lime
1 garlic clove / or use lazy garlic or diced frozen garlic
4 chicken thigh fillets
1 tin kidney beans
1 sachet Mexican spice (30g)
1 tbsp honey
1 chicken stock pot
120g rice brown or basmati (2 x microwave rice if you want an easier option)
3 - 4 tbsp (75g) Greek yogurt
Method:
Start cooking the rice (or skip if you are using microwave rice).
Food preparation: cut pepper, zest lime, dice chicken thighs, dice garlic, drain and rinse kidney beans in a colander.
Drizzle oil in a large frying pan on medium heat. Once hot, add the pepper and chicken and stir-fry until the pepper has softened and the chicken has cooked through (8-10 minutes).
Once cooked, add the Mexican spice, garlic, lime zest, and honey to the pan. Stir together and cook for a further 1-2 minutes. If using microwave rice, start prepping and heating the rice packs.
Take the chicken mixture off the heat and squeeze some lime juice over. When the rice is done, spoon rice into a bowl and top with the chicken mixture. Add 1-2 spoonfuls of Greek yogurt to serve.
