Honey Lime Chicken Thighs

This recipe is based on a Hello Fresh recipe that I tried before, but I have added my own adjustments to make the recipe even simpler to make. Very easy meal to make, not much preperation time needed, and takes around 30 minutes in total to cook everything. I also think it is very tasty and full of flavour! This recipe serves 2 portions.








Ingredients:

  • 1 bell pepper

  • 1 lime

  • 1 garlic clove / or use lazy garlic or diced frozen garlic

  • 4 chicken thigh fillets

  • 1 tin kidney beans

  • 1 sachet Mexican spice (30g)

  • 1 tbsp honey

  • 1 chicken stock pot

  • 120g rice brown or basmati (2 x microwave rice if want an easier option)

  • 3 - 4 tbsp (75g) Greek yoghurt

Method:

  1. Start cooking the rice (or skip if you are using microwave rice).

  2. Food preparation: cut pepper, zest lime, dice chicken thighs, dice garlic, drain and rinse kidney beans in a colander.

  3. Drizzle oil in a large frying pan on medium heat. Once hot add the pepper and chicken and stir fry until the pepper has softened and the chicken has cooked through (8-10 minutes).

  4. Once cooked, add the Mexican spice, garlic, lime zest and honey to the pan. Stir together and cook for a further 1-2 minutes. If using microwave rice, start prepping and heating the rice packs.

  5. Take the chicken mixture off the heat and squeeze some lime juice over. When rice is done, spoon rice into a bowl and top with the chicken mixture. Add a 1-2 spoonful of Greek yoghurt to serve.
